Healthy Eating

Ever seen the movie Food Inc.?  Rent it this weekend.  
It will change how you eat and look at food.
(I'll warn you, it is a documentary so some parts are a little boring, but it is very interesting!!)


























Here is a yummy pasta recipe I made for dinner tonight.  (to make it even healthier use whole wheat noodles)


Lemon Pasta with Chicken


Ingredients:
  • 1 pound dried bowtie pasta
  • 2 chicken cutlets, cut into fingers
  • Salt and freshly ground black pepper
  • 3 cloves garlic, sliced
  • 1/4 teaspoon red pepper flakes
  • 3 tablespoons olive oil
  • 3 tablespoons roughly chopped fresh parsley, for garnish
  • 2 lemons, juiced (I used 1, because that's all I had.  It still tasted good)
  • 1/2 cup grated Parmesan

Directions

Cook the pasta in a large pot of boiling salted water, until al dente. Drain well.
Season chicken with salt and pepper. Heat a large grill pan over medium high and add chicken. Grill until golden and completely cooked. Remove to a plate and slice.
Add the garlic and red pepper flakes to a saute pan with 3 tablespoons of olive oil and saute until fragrant. Add the cooked pasta and turn heat off. Mix all together.
Remove pasta to a large bowl. Add chicken to the warm pasta and season with salt and pepper. Sprinkle in chopped parsley. Add the juice of 2 lemons and mix. Before serving top with Parmesan.

Try it out!  Very light and fresh.

{an eventful weekend}

This last weekend was quite an eventful one!  
My dear friend from college, Emily, and her husband, Paul, came to visit. 

It was so fun to catch up.  
We haven't seen each other since before we were both married...so 2 years!
It had been way too long.  

We took them to a few of the yummy hot spots and hung out at the Spectrum.





On Sunday, we went to Cason's parent's house and celebrated his birthday with the fam.  
I made this DELICIOUS coconut cake for the celebration.

On Monday for Cason's birthday we went to dinner at Maggianos to celebrate.




After dinner we decided to go to Disneyland for the last 2 hours of the night.
I had a free pass, and with Cason's magic he got in free!!




Two hours is definitely not long enough for Disneyland, but we got about 4 rides in.

Buzz Lightyear, Pirates of the Caribbean, The Haunted Mansion and Cason went on Space Mountain.
It had been a LONG time since either of us had been...so it was fun!!


We were both tired by the end of the night.


Then he opened presents in the car...
his latest hobby is mountain biking, so we got him a few new things for that.


his new helmet which he needed very badly!


It was a great night and a great weekend!!

Baby #1: 6 1/2 months

It goes by soooo fast....

yet, soooo slow at the same time.


I'm definitely not ready yet, but I don't know how much more room is in there!  
My belly is tight. 
and hurts when I eat too much. 
Which is just about every meal.  
But then I get to feel her kick, and move around.

Isn't it amazing that there is a human that is being created inside of you?!

I can't even comprehend it.  
and I don't think I need to.

She's all I think about. (and Case too)
Pretty much all I talk about.
and I get emotional thinking about how much I love her already. 

here's to 6 1/2 months.
only 14 more weeks.
and 94 more days.

{comments as of late}

Here are some funny things people have said to me lately...

I'll be in the store and people will say out of the blue, "So when are you due?"  It kind of catches me off guard.  What if I was just really fat?!  

The other day I was at Trader Joe's with the three year old I nanny for and he wanted these penguin fruit snacks.  The penguins tummies are filled with juice, kinda like Gushers, and he looked at me and said, "Hey these penguins have big belly's just like yours!"  I about died laughing.  It was really cute!

A lady said to me the other day, "Oh, I didn't know you were pregnant!  I can tell you are having a girl because boys your belly goes straight out, and girls it goes all over!"  ....Thanks. 

I am only expecting more comments and tummy rubs the further along I get.  Can't wait to hear what people have to say when I am almost due!

Tonight we had a little Cinco de Mayo dinner.  
It was great!  I definitely (well hopefully) will continue to do this year after year.

Isle Of View

Last night for FHE (which we don't do very often) we made our way to Yogurtland.
We walked the .7 miles to my latest favorite.


Lately, I choose Yogurtland over Golden Spoon and Swirls.  
(although you can't beat the buy one get on free coupons at swirls
and the stamp cards at Golden Spoon.)
Tart+fruit+gummy bears=my yogurt choice.



Just soaking up every last minute of alone time with him!
It was a successful night.
